Pancakes have come a long way, from Nutella crepes and sugar-filled American pancakes covered with maple syrup to healthy, vegan protein options that won’t wreck havoc on your diet.

Where’s Pancake Day coming from?

It’s also called Shrove Tuesday, the last day of feasting before Christians begin Lent on Ash Wednesday — fasting from certain foods or activities for 40 days before Easter (46 to be exact but Sundays are not included).

People with religion of all kinds, however, join the tradition and enjoy diving in, because one just doesn’t say no to pancakes.

Honestly, I could eat this for breakfast every day. Wait till you give it a go and you’ll know exactly what I’m talking about.

This stack of deliciousness will leave you happy and satisfied leaning back in your chair with your hands on your tummy.

What you’ll need

  • 1 cup of coconut/almond milk
  • 2 scoops of vegan chocolate protein
  • 1 tbsp cashew butter (or nut butter of your preference)
  • 1 cup of oatmeal (grind it up)
  • 1 banana
  • 1 coconut yoghurt
  • 1tsp of baking soda

Mix it all up until the dough is creamy and smooth. Add some olive oil to the pan, pour in the dough and make the pancakes on medium heat. When they’re done and all stacked, top it with fruits of your choice (berries, kiwi, banana) and a touch of honey.
